After visiting two stores, I was finally able to get the great deal on Capri Sun at Meijer. They are on sale right now for $1.77 each. BUT if you purchase 8 in one transaction you will get an extra $8 off automatically at check-out. This brings the cost down to $0.77 each. I purchased a total of 16 boxes for a total of $10.94! No coupons are needed; however, I was able to use a MPerks coupon for $2 off any purchase of $2 or more to sweeten the deal. I think that I have a great stockpile for school lunches established.

DQ Miracle Treat Day

My daughters start school next week. I don't know about your school system where you live but I'm starting to feel like I need to take out a second mortgage to purchase supplies. I planned to go shopping this morning to get the rest of our needed supplies, then a brilliant thunderstorm erupted in our area keeping us inside. The upside to this was that I had the time to look for the best deals. I came across a post on Pocket Your Dollars. There is a great comparison chart available on the site. Look it over and plan out your shopping before leaving home and without having to scan the internet. I have to get 32 glue sticks, and I only have two children!

Here I Go Again...

I just discovered that my last blog post was in July 2010! I apologize for just dropping off the face of the blogosphere. Both of my kids are starting school next week (my youngest starts Kindergarten), and I am trying to think of things to keep myself on a schedule. I will volunteer at their school, I already oversee the outreach team at my church, and do most things for our household. I think that I should have extra time to myself to devote to couponing more and on a regular basis which led me to think that I can get back to blogging regularly. If anyone is out there and still following me, please leave a comment and let me know. Let me know if you are still interested in hearing what I have to say and let me know what types of posts you would like to see.

Keep me accountable and I'll encourage you too! It's a new month so it's time to sort through the coupon stacks and take out the expired ones. Start printing the new ones too. The pic shows my stacks of mostly outdated and disorganized coupon inserts. I hope to attack that sometime soon too! Don't feel that you're the only ones I have neglected in the past year...I have a stack of school photos of the kids from last year that I never sent out to family! It might be a wise idea to get those out before this year's photos are taken. My oldest has lost a few more teeth since those were taken.

Garden Update (7/7/10)

Things are growing well in the garden. We cut off three heads of broccoli last week and enjoyed it in our Pasta with Broccoli recipe. I have pulled off four small zucchini so far and used them in muffins this week. The tomatoes are getting big but need to turn red. Also, the bugs/worms/invaders are getting bigger too! I have tried to keep the garden organic and not used any fertilizers or pesticides so far, but it's hard to catch every critter. What are you eating from your garden?

Tasty Tuesday (Slow Cooker Banana Bread)

The other day I had some bananas going bad very quickly. I wanted to make banana bread, but it has been so hot lately. I did not want to have the oven on for an hour. I found a recipe to fix banana bread in the slow cooker. It worked out really well. I actually took the bread to the construction workers that are building our new church. They loved it! They were all amazed that I had prepared it in the slow cooker. I can't take all, or any, of the credit. I found the recipe HERE. I used the recipe from her book: Make It Fast, Cook It Slow. I borrowed the book from the library. You could use your own favorite recipe and it should work too. Do you have any unlikely things that you have prepared in your slow cooker?

Oh, did you get your FREE spicy chicken sandwich from Chick-fil-A this week? We went last night. It was pretty good. I was also pleasantly surprised to learn that we also got a goodie box. It had an adorable plush Chick-fil-A cow, Atomic fireball candies, and a coupon for another FREE sandwich. The coupon doesn't expire until the end of October too!

I used a $1.00/1 pound or more of ground beef catalina that I earned last week from purchasing two packs of Kraft singles. I also had a $3.00 catalina which helped cover the cost of the beef and help towards the purchase of the chocolate chips.

Can you see it? That is my first zucchini! I am holding out hope that more will start growing soon. We had a rainstorm a few weeks ago that included heavy downpours and some pea-sized hail. A lot of zucchini and squash blossoms got broken off during that.

That picture shows that I have a couple of cucumbers growing too! How are things growing in your garden? Are you able to eat anything yet?

Garden of Weedin' Wednesday

I hope to bring you updates from my gardening adventures each Wednesday. The first pic you see above is of my strawberry plant. We have only had about three strawberries so far to eat, but I hope those buds are signs of good things to come.

Today I wanted to encourage you to grow something this year. Gardening can give you a great sense of accomplishment, provide a learning experience for your children, fill your belly and draw you closer to God. That's a lot to ask of a simple seed, but you will be amazed at the results. We started a small garden in our backyard this year. Read more about its humble beginnings HERE. If you aren't ready or able to go headfirst into that, then I suggest you attempt container gardening first. The past couple of years, I have grown tomatoes, green peppers, various herbs and some flowers in containers. I have used both seeds and seedlings with equal success. The below pic shows some seeds that I have started. They will soon need to be replanted into another bigger container. I got the cute little pots and seeds at Target in the Dollar Spot. You get one pot, a soil pellet and a small pack of seeds all for $1.00.

Once your seeds get growing, then you can transplant them to a larger outdoor container. The last picture below shows my large containers. I have put some jalepeno peppers in the large square container. I have some heirloom lettuce seeds in the large round one. I have herbs in the two smaller rectangular containers: three types of basil, cilantro and chives. I hope this inspires you. Let me know what your're growing!

Tasty Tuesday (Pasta with Broccoli)

I don't think I have shared this recipe on here before. My apologies if I have. I have a few friends that I have been meaning to share this recipe with and this is a great way to reach many people.

I discovered this recipe when I was researching IBD (Irritable Bowel Disorders). I went through a series of tests and procedures last summer because a lot of doctors thought I had some form of IBD. Well, so far, I remain undiagnosed but I learned a lot and gathered some great recipes in the process. According to the book this recipe came from, What to Eat with IBD, "broccoli (or other cruciferous veggies) contain compounds that trigger enzymes that block carcinogenic damage to cells." That will benefit all of us. My kids, husband and others that have tried it love this recipe. It is really quick to put together, quick to cook and uses some pantry ingredients that you should have stockpiled.

Pasta with Broccoli
Serves 4
Ingredients
2 Tbs extra-virgin olive oil
1 garlic clove, sliced
48oz. chicken broth
1 large head broccoli, cut in florets
1 pound penne pasta
salt and pepper to taste

Directions
In a large soup pot, saute garlic over low heat in olive oil.
Add chicken broth and heat to a simmer. Wash broccoli and add it to the pot.
Bring mixture to a full boil.
Add pasta to pot and cook for 10-12 minutes more. Season with salt and pepper and serve with good quality Parmesan cheese.

I had $7 in Register Rewards to use. I picked up Skintimate shave gel and Stayfree pads which were items that earned RRs this week. I used some of my extra rewards to purchase a bottle of canola oil and a candy bar (you have to get fun filler items). I know that I spent a little over $1.00 out of pocket, but I earned another $6 in Register Rewards to use later!

KROGER
I was recently selected to host a MyGetTogether party sponsored through the Pssst...General Mills program. I receieved some great SWAG to make my party special. Among other things, I was given 4 FREE coupons for crescent rolls and a $20 VISA gift card to purchase ingredients for the party. I will share on "Tasty Tuesday" more details about the food and the party. The majority of items shown were purchased for the party. I did get a few other items (like dog food) that we needed at home. I believe that I spent about $45 dollars out of pocket for everything. [and $30 of that was for the dog food] I also received a $4.00 catalina from the purchase of the dog food.

Last year we joined a CSA (Community Supported Agriculture)Farm. The food was great and we enjoyed our weekly trips to the farm. However, this year, we have decided to start our own garden at home. The initial start up costs were fairly close to the amount of money we spent for a weekly half bushel of food from the CSA. We decided to build a slightly raised garden area and make our own soil mix. We used some seeds that I got for FREE from various sources and we also purchased some plants (mostly just in case our seeds don't sprout). We don't have much gardening knowledge or experience, so we're learning as we go. I hope you will enjoy watching my garden grow and please contribute comments that encourage and educate me in related matters. I have included a few pictures of our garden's early beginnings. Some things are already sprouting and I am so excited (and rather impatient) to see what else develops. We have planted cucumbers, cantaloupe, tomatoes, broccoli, green beans, squash, onions, peppers, lettuce, strawberries, three kinds of basil, chives, and cilantro. Whew! Tasty Tuesday (Lentil Soup)

My husband was recently diagnosed with Diverticulosis. We are still waiting to learn more about treatments and preventative measures to take. In the mean time, we have been told that a diet high in fiber and fruits and veggies helps. I scoured cookbooks at the Library and found this recipe. It sounds appealing, so we're going to try it. Even if you don't have any intestinal disorders, the ingredients in this are simple and relatively inexpensive which should be appealing to everyone. Come back and leave me a comment if you decide to try this too. This recipe is from the book, Healthy Foods, by Leanne Ely, C.N.C.

Ingredients
1 pound lentils, rinsed, drained and picked over
2 onions, chopped
2 carrots, chopped
5 cups chicken broth
1 teaspoon thyme
1 teaspoon garlic powder or use 1 clove fresh garlic
1 can diced tomato
salt and pepper to taste

Directions
In a soup pot, add a little oil and saute vegetables. Add remaining ingredients and simmer for one hour. OR you can put everything in a crockpot, turn on low and serve it up nine hours later. If you like a thicker, creamier-type soup and less bumps, feel free to puree a part of the soup in the blender.

Menu Plan Monday

I didn't post a menu plan for last week, but I did have one. We managed to follow it pretty closely. The kids here were out of school for three days last week thanks to a holiday and snow. I didn't leave the house for three days. That helped us to stick to our plan better. I am continuing my personal challenge to empty out my freezer and thin out my pantry. MONDAY Tuna cakes (Great recipe for using up the massive amounts of FREE tuna and Stove Top piled up in my pantry.)

TUESDAY Breakfast for dinner [Daughter's dance class night so I need something quick and easy; maybe I can get the family to try quiche.]

WEDNESDAY French Onion Soup (recipe from my Better Homes & Gardens cookbook page 386) [Youngest daughter has dance class during the day, so another quick meal is planned to coincide with my predicted energy level.]

THURSDAY Music Showcase during the day then Pizza Party at daughter's school "Kindergarten Family Storytime" Night

FRIDAY Lentil Soup (recipe to be shared in Tasty Tuesday tomorrow) [We are meeting with our accountant to do annual taxes. I'm hoping this recipe will work in the crockpot. I'm also hoping for a good outcome with the taxes.]

Menu Plan Monday

I have a very busy week ahead: dance classes for girls, babysitting for me, school parties, etc. I am continuing my challenge to empty out my freezer. I am still limiting my shopping to only perishables in hopes to use a larger portion of my stockpiles before mass deal shopping again. Therefore, I have decided to join in on Menu Plan Monday, hosted by I'm an Organizing Junkie. Below is my menu plan for this week. I've included links to recipes that I will use. I note changes to recipes that I am likely to make. Notice that I am using a lot of chicken this week; that is the main protein left in my freezer.

MONDAY: Lemon Baked Chicken/roasted potatoes/salad [I'll use boneless, skinless chicken breasts and adjust time accordingly to recipe. I will keep extra chicken to use in Chicken Pot Pie recipe on Thursday.]

TUESDAY: Breakfast for dinner (ham/eggs/biscuits)

WEDNESDAY: Chicken Tortilla Soup [I will probably use canned dice tomatoes in place of the canned whole tomatoes and omit enchilada sauce.]

THURSDAY: Chicken Pot Pie with Biscuit Topping/applesauce [I omit the turkey from the recipe and will use white russet potatoes; that's what I have on hand.]

FRIDAY: Pizza (Whole Wheat Pizza Crust) (Easy Pizza Sauce) We divide the dough out so that the girls can make their own individual pizzas. My husband and I use the remainder dough to make one large pizza and there's always leftovers for lunch the next day. We top our pizzas with everything from brocolli, mushrooms, turkey pepperoni, banana peppers, whatever we have on hand.

SATURDAY: Bean Burritos/cheese quesadillas/Spanish rice [see below]

SUNDAY: Happy Valentine's Day [Small Group from church over for dinner] Spaghetti/breadsticks/salad

***SATURDAY'S BEAN BURRITOS RECIPE
(1) Open one can of refried beans and warm in appropriate container in microwave.
(2) Stir in about one cup of shredded cheese into beans until melted.
(3) Spoon cheese/bean mix into center of warmed flour tortillas.
(4) Fold/roll into burritos and place on baking sheet.
(5) Bake in 350 degree oven for 10 minutes.
*I am using my quesadilla maker to make these for the kids and a microwavable pouch of Uncle Ben's Spanish Rice for a side dish.

I purchased 10 items for less than $1.00!!

I also found some organic Rainbow Chard. It has the most vibrant colors. It seems to me like I spent a lot of money for a few items. I am trying to tell myself that I would rather spend more money on healthier foods than on future doctor bills.

Eating from the Pantry Challenge Update and Future Goals

I am not posting a "Deal Wrap-Up" today, because I DID NOT go shopping this week! I was very busy and I was also trying to finish off this month's challenge of limiting my shopping. I participated in The Eat From the Pantry Challenge by challenging myself to empty out my deep freezer and limiting my shopping. My freezer is not completely empty, but we have made a good dent in the inventory.

We were stuck inside today due to 4 inches of snow on the ground and frigid temperatures outside, so we did a major purge of things inside the house. We have a van load of things to donate (toys, food, etc.). I only went shopping a handful of times this month and primarily stuck to purchasing perishables like milk and produce. I REALLY wanted to go to Kroger and get some things from the MEGA Sale! I believe that the sale continues through Febraury 7th, so that is some relief. As a family we only ate out 2 times in the entire month! My husband wanted to order pizza last night, but I stuck to my guns. We prepared a hopefully healthier meal (Tortellini Alfredo with peas) and in a time faster than pizza could have been delivered.

I hope to continue my quest to empty out the freezer next month and limit shopping. My family also completed another major goal this month. We paid off our van loan and we are DEBT FREE (everything except the house)! We are following Dave Ramsey's Baby Steps and our next goal is to save 3-6 months of living expenses. Therefore, I am trying to put all extra money towards that goal now. I need to discipline myself to putting money aside for that goal. It would be so easy to just put myself in a mindset that I can shop more and get more. I do NOT want to start that habit. Tasty Tuesday (General Mills cereal review)

On Tuesdays, I generally try to share a recipe using ingredients gathered through all of the great deals posted on this blog. Today I am going to share a review of General Mills cereals. Recently, General Mills through My Blog Spark sent me coupons for four FREE boxes of cereal. General Mills is spreading the word that they are on a mission to decrease the amount of sugar in cereals advertised to children 12 and under. This is great news to all. They are reducing the sugar and increasing certain vitamins that are key to the growth of children too. Their cereals also include whole grains which should be an important part of anyone's diet.

I went to the store and picked up 2 boxes of Lucky Charms and 2 boxes of Honey Nut Cheerios. Everyone in the family loves these. A box of Lucky Charms didn't last one week around here. There are even cuter, smaller sized marshmallows and it seemed like there were many more in this box than I remembered. General Mills has done a great job. Even though I am still participating in the Eat From the Pantry Challenge, I went shopping again this week. I did a much better job though compared to last week's totals. I went to two stores and paid less than $3 total for 38 items! Check out Money Saving Mom's Super Savings Saturday and the Cha-Ching Challenge to check out what others have saved this week. I thought it worth the effort to stop at Target because I was already shopping at Meijer (which is in the same shopping center). I picked up some "nearly" FREEbies like Buddies soaps, Nivea body wash, Downy wrinkle release, Band-Aids, and first aid kits. I say "nearly" because I noticed too late that my coupon for a FREE Downy wrinkle release only deducted $1.00 instead of the full $1.97 price. Oh well, I only paid less than $3 for all of the items pictured.

I could say that EVERYTHING pictured was FREE! I spent $5.03 technically out of pocket at the store but I received a $5.00 catalina and a coupon for a FREE bag of Nature Valley Nut Clusters. To me this could mean that I actually made about $2.50 on the whole transaction. On a side note, I was pleased to discover that I got a FREE bag of Nut Clusters at the store but I also got a catalina print out for another FREE bag. I was able to accomplish all of this with the help of catalinas earned last week, FREE coupons for the cereal from General Mills and My Blog Spark and other great coupons. This is one of the greatest reasons and examples to spend all of this time and effort couponing!

House Party Fun and FREEbies

I was honored to be selected for another House Party. What is House Party? My most recent party was for Wii Your Shape and Jello Mousse Temptations. It was a lot of fun! The picture shows all of the items included in my Party Pack. Everyone can play at the same time, even the youngest kids enjoyed bopping around to the music. You are getting a great workout burning off tons of calories and having fun at the same time. Tasty Tuesday (Pantry Challenge Updates)

I have been participating in the Eat From The Pantry Challenge hosted by Life as Mom and Money Saving Mom. My main goal is to empty out my deep freezer. I had been doing relatively well and then my husband had an attack of diverticulosis and was put on a liquid only diet for 10 days. That put a crimp in my menu and shopping plans. I didn't plan on shopping but I needed to go to the store to get him some things he could "eat." SO I thought to myself why not grab some great deals while I am out shopping anyways. Well, two stores and almost $80 later, I kind of fell off the wagon. I included my "Deal Wrap-Up" below with my totals spent and saved at the stores. I still think I did pretty well. I purchased a lot of produce which I don't have in my freezer. I also got some great deals on cheese, Pillsbury breads, pasta, and fruit snacks which were all depleted in our stockpile. Lastly, I have also included a link to a post from Life as Mom where she talks about "But, What if I Can't Refill My Pantry?" which should be helpful to those of you who are doing better at sticking to their goals than I am. Tasty Tuesday (ORANGE you glad I didn't say Banana?)

The recent nationwide freeze has been reported to have hurt crops in Florida and elsewhere. We can likely expect limited quantities and higher prices in the near future. Until that happens, you might be wondering what to do with all of the oranges you might have already purchased. Aldi has 4 pound bags of navel oranges on sale this week for $1.49, so run out and get some if you can. Boredom can quickly set in if you are seeing mounds of oranges to peel and eat or squeeze for juice. Below are some "fresh" ideas for using those oranges. Please leave a comment if you have any additional ideas to share.

Orange Marmalade (Made using your Bread Machine)
I own an Oster 2lb. Expressbake Breadmaker and this recipe is from the booklet included with the machine. Check your breadmaker instructions to make sure if it can make jams.
*Ingredients*
1-1/4 cups sugar
2 Tablespoons powdered low-sugar fruit pectin
3 large oranges
1 lemon
*Directions*
(1)Peel off the zest from one orange and the lemon; chop finely
(2)Remove and discard remaining white peel from orange and lemon
(3)Peel remaining oranges and discard peels. Slice fruit into 1/2-inch pieces
(4)Combine chopped peels, fruit, sugar and pectin in bread pan
(5)Select Basic setting
(6)Press "Start/Stop" button. Allow to mix for 5-6 minutes, scraping sides of pan with rubber spatula. Press "Start/Stop" button to cancel
(7)Select "Bake" setting. Press "Start/Stop" button. When unit signals and display reads "0.00," press "Start/Stop". Using hot pads, remove bread pan. Pour jam into containers; cover. Refrigerate to set. Makes about 3 cups.

JELLO JIGGLERS ORANGES
Make orange jello using the Jigglers recipe found on the back side of the box. Pour prepared jello into hollowed-out oranges. We use what is left over after making juice with our juice maker. Place in refrigerator to set. You can now cut into slices for a silly treat.

CONTAINERS FOR BIRD SEED
This is another great use for using up the orange halves leftover after making juice. Just fill up the orange halves with some bird seed and leave outside for the birds. Make sure to place them strategically so that you can do some indoor bird watching on these cold days when you are stuck inside. As you can see, our feathered friends were very grateful and messy!

Well, as I write this, my kids are home from school due to snow. However, not a bit of snow has fallen yet! Forecasts are predicting anywhere from 2-5 inches of snow for my area. Let's hope it starts falling soon. My girls received a sled for Christmas, and they are eager to use it. Christmas Day is fast approaching but my family has already started the festivities. We hosted the first of many family get-togethers last night. It was a lot of fun but it left me little time to shop this week, so I apologize for not having a Deal Wrap-Up yesterday. I spent the small amount of Register Rewards and Extra Care Bucks money that I had purchasing plates, napkins, cups, food and drinks for the party. It saddens me to not have that money to go shopping with this week, but that's one of the reasons we are so eager to accumulate those free dollars. Use it on stuff you really need!
